Suji ka halwa is your classiceveryday delightful North Indian sweet made with fine semolina or the cream made from wheat (farina), sugar, ghee, and nuts and flavored with cardamom powder. It is a popular sweet in Maharashtra, this sweet is called as Sheera. Semolina is known as suji, sooji or Rava. This simple halwa recipe that melts in your mouth comes together in about 15 minutes. The recipe I share is a family-heirloom recipe that we've made for a long time during family gatherings celebrations, special occasions and holidays.

Suji Halwa is also referred by the name of Rava Sheera and Rava Sheera in Western India and Rava Kesari in South India. The recipe is mostly the same but with some ingredients changing here and there.

Although semolina or rava is the key ingredient. In some variations there is milk added instead of water, and is referred to"milk kesari. To enhance flavor, usually, cardamom powder is usually added.

This halwa may also be prepared to mark an occasion of auspiciousness or for a pooja celebration. It could also be used for a special occasion such as Diwali, Ganesh Chaturthi or any religious event that is held at your home, or you just want to have something sweet. It also serves well as an excellent breakfast option or dessert for after dinner.

Since this is an easy and quick recipe for halwa, you don't have any excuse or occasion to cook it. I make sooji halwa often to serve as an bhog or naivedyam to offer to the gods.

We make Suji Halwa and puri for the Navami ceremony that is part of the Navratri festival. Kala chana too is made. On this day, we offer kala chana, suji halwa and puri to the tiny girls (kanjak) who symbolize the Mother Goddess.

The rava kesari , which can be found popularin South India typically comes with a synthetic orange color added. You can however make similar rava kesari using natural coloring agents such as threads of saffron, or saffron powder.

Sooji Halwa Proportions

Sooji Halwa is typically made in bulk on festive or religious celebrations. If you want to make a large amount and want to make a large quantity, there's a certain proportion you have to adhere to.

The ratio of suji to water to Ghee is 1:1:2:0.5 in the cup or glass measurement. I slightly deviate from the ratio and add an amount of ghee, but less sugar.

  • Sugar - For 1 cup sooji (or rava), I would add 2/3 or 3/4 cup of sugar. This means that the suji Halwa is less sweet or is sweet. A cup sugar makes a very sweet taste.
  • Ghee I also add 2/3 cup of ghee per cup of suji. For me, 2/3 cup is a good amount of ghee. Reduce or increase the ghee to your preference.
  • Water I have added 2.5 cups water for 1 Cup of Suji. However, you could include 2 cups water. The amount of water you add can be increased depending on the quality of the rava, and if you want a pudding-like smooth consistency.

  • Water I have added 2.5 cups of water for one Cup of Suji. However, you could add 2 cups of water. The quantity of water may be increased according to the quality of the rava as well as should you prefer the consistency of a pudding.
